Plus you can adapt this recipe in as many different ways as you can think of so that you’ll never get bored. The turmeric and yellow mustard will make your ‘egg’ filling look like eggs, and pressed, crumbled tofu tastes just as good as scrambled eggs, if not better!

This recipe serves 4 (but you may want to double it and freeze some for another day).
Ingredients for the veggie filling
- 1 tablespoon olive oil
- 3/4 pound potatoes, diced
- 1/2 red onion, diced
- 1 clove garlic, finely minced or pressed
- 1/2 teaspoon oregano
- 4 tortillas, any kind, warmed (see FAQ section for ideas)
- 1 oz vegan cheddar (or other favorite vegan hard cheese), shredded or grated, or 4 teaspoons nutritional yeast
Ingredients for the tofu egg salad filling
- 6 oz tofu, firm or extra firm
- 3 tablespoons vegan mayonnaise (see FAQs below for recipe)
- 1/2 tablespoon yellow mustard
- Pinch cayenne pepper, spicy chili powder, or smoked paprika (optional)
- 1/2 teaspoon turmeric
- 1 tablespoon fresh parsley or cilantro, chopped
- 1/2 tablespoon fresh dill, chopped
- 1 green onion, finely sliced
- 1/2 cup cherry tomatoes, halved (or one medium tomato, diced)
- 1/2 tablespoon lime juice
- Salt and ground black pepper

Method
First, you will want to press your tofu to remove any excess liquid. You can do this by pressing it between two plates with a weight on top or use a tofu press like the one at https://tofubud.com, which does it for you.
Removing the excess water from your tofu means that the tofu will have more flavor, as it will soak up the spices more easily.
While your tofu is draining, heat the olive oil in a large skillet over medium-high heat. Sauté the cubed potatoes till lightly browned (about 7 minutes). Don’t stir them too much – let them form a crust before flipping them.
Now add the garlic, oregano, and red onion and sauté for 7 minutes more, or till the potatoes are done (test with a fork). If desired, add salt and pepper (you can also add some parsley for a bit of color, but this is up to you).
Using your hands, crumble up your tofu in a large mixing bowl. Add the rest of the egg filling ingredients, and stir to combine. Add a bit of salt and pepper if you wish. You can also add a bit more vegan mayonnaise, depending on how creamy you like your egg salad.
Now it’s time to assemble your burritos. Top each tortilla with a heaped spoonful of the veggie filling, followed by a spoonful of egg salad. Sprinkle some cheese or nutritional yeast on top, and roll up your burritos.
Serve right away, or wrap them in aluminum foil and warm them gently in the oven or a microwave to melt the cheese.
Any leftover burritos will keep in the fridge wrapped in the foil for up to three days, or you can freeze your burritos for up to one month.

How do I make vegan mayonnaise?
Here’s how you make vegan mayonnaise (often called vegenaise):
Blend 1 teaspoon of lemon juice, 1/2 cup of soy milk (or oat milk), a pinch of salt, and a pinch of mustard powder in a blender. Slowly add 1 cup of canola or sunflower oil till the mixture is thick. Ta-da! Homemade vegan mayonnaise.
What kinds of tortillas can I use?
There are many different types of tortillas, and the good news is that they all work brilliantly with this recipe.
Try some spinach, corn, beetroot, or sweet potato tortillas. All of these are naturally gluten-free and are delicious.
Traditional flour tortillas work, or you can make your own using gluten-free flour.

What’s nutritional yeast?
