I’ll admit, sometimes feeding the kids can be a chore. Now we are all at home, you have to do it THREE TIMES a day! Plus snacks! My youngest in particular is really fussy and trying new things with him can be a bit of a pain.
One of our most successful meals that I know he will always eat is spag bol, even when it’s stuffed full of hidden veg, but it can take a while to cook. If I’m feeling organised, I’ll put everything in the slow cooker in the morning – mince, garlic, oregano, tomato, beef stock, onion and as much chopped veg as I can fit in – and all I have to do is chuck some pasta on at dinner time.

I’m always on the lookout for simple and balanced meals that will save time, have everyone well fed and that the whole family will love.
It’s especially important at the moment, which is why I wanted to share this super easy recipe, perfect for cooking at home.
Homemade burgers are one of our favourites. Using lean beef mince (containing 5% fat or lower) and fresh ingredients means I know exactly what is in them. You can also secretly add veg to them and the kids will never know!
Beef contains zinc, iron, vitamin B12 and vitamin B6 that help the immune system to work normally. It’s naturally rich in protein, low in salt and provides eight vitamins and minerals that contribute towards good health and wellbeing. These are: iron, niacin (vitamin B3), vitamins B6 and B12, zinc, riboflavin, potassium and phosphorus.

Lean beef is a natural source of vitamin B12;
- Vitamin B12 helps normal energy production in the body
- Vitamin B12 helps the nervous system to work normally
- Vitamin B12 helps normal red blood cell formation
- Vitamin B12 helps the immune system to work normally
- Vitamin B12 helps reduce tiredness and fatigue

The great thing about lean beef cheeseburgers is that they can also be frozen, so you can make a big batch to cook at a later date.
Substitutions if you don’t have all the ingredients
If you have lean beef mince, you can make this recipe! The beauty of this recipe is that you can swap in other items if they are not available. No buns? Enjoy the burger with potatoes, rice…or eat wrapped in lettuce. No egg? You can leave it and the breadcrumbs out and just refrigerate your patties to help them keep their shape or substitute with ¼ cup avocado. Worcestershire sauce can be replaced with a small amount of mashed-up anchovy or anchovy paste.
The store cupboard staples can be added if you like (and it does taste better in my opinion!). But you can play around with the spices according to what you have!
To make 12 large tasty cheeseburgers you will need:

- 1kg lean minced beef (if not available use pork or lamb)
- 2-3 slices of bread for breadcrumbs
- A red or white onion
- A large egg
- Garlic or garlic paste
- 1tbsp Worcestershire sauce
- A pinch of salt and pepper
- Grated cheese (about 100g) – we used a cheddar and mozzarella mix, but you can use what you have. This is optional; if you’d prefer to add your cheese after cooking or leave it out, it’s up to you
You can adjust the amounts if you want to make more or less.

You’ll also need to get some burger buns (or sandwich between two lettuce leaves for a lower carb option), a large tomato, lettuce, sauce of your choice, and cheese slices if you like them!
To make the burgers:
Chop the onion as finely as you like (I just rough chopped them because chopping onions makes me cry!) and use a food processor to blitz the bread into breadcrumbs.

Add the meat, onion, breadcrumbs and egg into a mixing bowl with some garlic, Worcestershire sauce and a little salt and pepper to season.

Mix the ingredients (I used my mixer, but hands work just as well) and then shape into patties about three quarters of an inch thick, placing on greaseproof paper on a baking tray.
Let them chill in the fridge for a while before cooking if possible.

You can either fry the burgers, flipping regularly, or let them bake in the oven for around 22 minutes on 190 degrees turning once halfway through.

My favourite type of burger buns are brioche rolls; pop them in the oven with the burgers for a few minutes to toast and then serve with lettuce, tomato and burger sauce!

Homemade chips are a great accompaniment; for this you just need potatoes and flour. Slice the potatoes into large chips, boil them for ten minutes, coat them lightly in flour and pop them on greaseproof paper in the oven until done, shaking the tray a few times and using a spatula if necessary.


The lean beef burgers got the thumbs up – not just from the kids but from my husband and parents too!
