Six unique CBD infused recipes

This is a collaborative post: Cooking with cannabis isn’t a new phenomenon – in fact, the practice dates back centuries where it featured in spiritual recipes in countries such as Italy and India. But the practice of cooking with CBD is something that has sprung into popularity in recent years. Here are six unique CBD-infused recipes to try.

1. CBD Guacamole

Ingredients

  • 3 medium ripe avocados, peeled and de-pitted
  • 1 tbsp lime juice
  • ½ tsp salt
  • ½ tsp ground cumin
  • ¼ tsp ground cayenne pepper
  • 2 small tomatoes, seeded and chopped
  • 1 large garlic clove, minced
  • 1 tbsp fresh coriander, chopped
  • ½ jalapeno pepper, finely chopped
  • 1ml of CBD Isolate

Mash the avocados and add the remaining ingredients. Top with the CBD Isolate and then mix, before covering with cling film and leaving at room temperature for two hours before serving.

2. CBD Mashed Potato

Ingredients

  • 8 cups pre-made mashed potato
  • 2 tbsp unsalted butter
  • ¼ cup double cream
  • ¼ cup parmesan cheese, grated
  • 2 tsp each salt and pepper
  • 0.16ml CBD Isolate

Combine all the ingredients and whip together until pureed. Transfer to an ovenproof dish and top with more grated cheese, then bake at 200oC until golden brown. 

3. Herbal Latte

Ingredients 

  • 1 cup unsweetened milk or plant-based milk
  • 1 tbsp raw cacao
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • Your choice of flavourings – we particularly like cinnamon, mint, rose or lavender for this drink
  • 1 full dropper of CBD Isolate

Blend all ingredients, except the CBD, in a saucepan and warm through to your desired temperature. Pour into a mug and add in your CBD before drinking. 

4. Chocolate Fat Bombs

Ingredients

  • ½ cup coconut butter
  • ½ cup coconut oil
  • ½ cup raw cacao
  • 1 tsp honey or maple syrup
  • 20mg CBD Isolate

Melt the coconut oil over a low heat and whisk in the cacao once fully melted. Add the honey and stir again until fully combined. Divide the mixture between 6 silicone muffin moulds and refrigerate for 30 minutes until firm. In a separate saucepan, melt the coconut butter – remove from the heat and mix in the CBD. Remove the batter from the fridge and top with the coconut-CBD mixture, then refrigerate until solid. Store in the refrigerator. 

5. CBD Buddha Bowl

Ingredients

  • ½ red onion, cut into wedges
  • 1 sweet potato, cubed
  • 1 head broccoli, chopped into florets
  • 2 handfuls of kale, chopped
  • 2 tbsp olive oil
  • ¼ tsp each salt and pepper
  • 1 can chickpeas
  • Your choice of protein, such as tofu, steak or chicken
  • 60g tahini
  • 3 tbsp hot water
  • 1 tbsp agave
  • ½ lime, juiced
  • 0.2ml CBD Isolate

Blend the tahini, water, agave, lime juice and CBD together and set aside. Roast the vegetables until brown and cooked through. On a separate tray, roast the chickpeas for 15 minutes until crisp and brown. Cook your protein source as desired, then plate up the ingredients, topping with your tahini sauce just before serving. 

6. Chocolate Chip Cookie Bars

Ingredients

  • ½ cup almond butter
  • ½ cup coconut sugar
  • 90ml melted coconut oil
  • 1 cup almond flour
  • 1 tbsp coconut flour
  • 1 tsp cinnamon 
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 tsp bicarbonate of soda
  • ¾ cup chocolate chips
  • ½ dropper full of CBD Isolate

Preheat your oven to 175oC and line an 8×8 baking tray with greaseproof paper. Mix all the ingredients together in a bowl, folding in the chocolate chips last. Transfer to your lined tray and bake for 20-25 minutes. Let the mixture cool before cutting into bars.
